Those Lamb Ribs were Good!
Monday (31 August) we got up, had breakfast and coffee, then got about business. Connie was going to do laundry, as usual, and I dove into Lander to buy a few groceries. I saw seven pronghorn antelope and one mule deer on the way into Lander, but nothing on the way back.
The day was windy and a bit cool- fall is coming, and we had a few showers.
I smoked corn on the cob and hamburgers for lunches, which took longer than expected because, well, the pellet grill needs to be fed and I lost track....
Between the two of use, we read and did computer work, so there really wasn't much to report.
Tuesday, a cool and occasionally rainy day. We relaxed and did computer work and projects. I smoked some chicken thighs- salt and pepper rub, Texas style- for dinner with salad and smoked corn on the cob. A very restful day.
Wednesday. Connie went for a hike with Jan. We were planning to defrost the refrigerator tomorrow, but Joe had a late night epiphany- he had mentioned that there was a school tour tomorrow that we could watch as training. Wait, people (us) have to be giving the tour. Surprise! Joe is a great guy and is great to work for, sometimes a bit disorganized, but you gotta take one for the team some times...
Anyway, I went into Lander, again, to pick up enough food to get us through the weekend. I had been planning to buy and smoke a leg of lamb and make pulled smoked lamb "gyros." While I was looking at the lamb, I saw a few racks of ribs marked half off. Done! Two racks. I returned home. I saw two pronghorn antelope on the way. We put the groceries away and did some reading and computer work. Around 4:00, I fired up the grill and grilled the ribs and a few ears of corn.
Jesse, one of the seasonal employees, who is staying next door to us came by as I was grilling. We had been talking about getting together for a cookout. So, we had lamb ribs, corn on the cob, and salad. And a nice couple of hour visit. We see each other regularly and talk, but this was our first long conversation. It got a bit chilly, but it made for a wonderfully evening sitting outside, eating, visiting, and, yes, gossiping.
After dinner, we cleaned up and worked on our respective projects. A really nice restful few days,
