A Relaxed Day off, Ghost Stories, and a Smoked Chicken

Houghton-Cotter Store, South Pass City State Historic Site, Wyoming

The Houghton-Cotter Store. Or was it? This store was owned by James Smith, who married Janet Sherlock, and together they opened, wait for it, the Smith Sherlock Company Store. The store is just to the east of the Smith Sherlock Company Store and has been repurposed as an mining exhibit and is well worth visiting.

We slept in today until around 8:00. Connie got up to make coffee, so I lounged in bed for a few minutes. I'm feeling pretty rested!

We have, still, a bit of leftover smoked salmon. I diced and lightly sauteed a few green onions and heated some of the salmon. Then I commenced to making omelettes with cream cheese, green onions, and salmon. There were no complaints. I still have a bit of salmon and cream cheese, so I may repeat this tomorrow.

I read in the morning and Connie worked on some knitting. Later in the day, displacement activities completed, I got to work on my ghost stories for Friday evening. I still have to gather a few details, but now have four stories. I want one more.

In mid afternoon, Connie went for a walk and I began smoking a spatchcocked chicken for dinner. While the chicken was smoking, I browned a bunch of mushrooms for dinner Friday and steamed some green beans, all while thinking of a fifth ghost story. I will work on that this evening with a magic elixir at hand.

School tours tomorrow and Friday, but they are on the small side. For the most part, I've had a lot of fun with the kids.

A quiet day, not much to discuss unless I come up with that fifth story.
