Smoking Cheese
Last night, I opened eight half-pound blocks of cheese, five cheddar and three pepper jack, that I had bought to smoke and placed them in the smoker to air dry. I got up early this morning and started the smoking process. About 11:00, or so, pulled the cheese out and wrapped it paper towels and placed it in the refrigerator to begin curing.
The wind began picking up, as had been predicted. Even more, it was a cool wind. I worked on my Lovejoy Diaries project, locating and downloading articles from a newspaper in Kemmerer, Wyoming, where Lovejoy lived in the early 1900s. Connie walked down into town and chatted with a few people. We spent the afternoon working on various projects in the trailer.
